Cream Puffs



When I need a quick and delicious dessert, I usually make small things like cupcakes, bars or in this case these cream puffs!

Ingredients

• 2 (3.5 ounce) packages instant vanilla pudding mix
• 2 cups heavy cream
• 1 cup milk

• 1/2 cup butter
• 1 cup water
• 1/4 teaspoon salt
• 1 cup all-purpose flour
• 4 eggs

Directions

Mix together vanilla instant pudding mix, cream and milk. Cover and refrigerate to set.

Preheat oven to 425 degrees F

In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball.

Transfer the dough to a stand mixer.

Using a stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.

Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.

When the shells are cool, split and fill them with the pudding mixture and sprinkle with powdered sugar.

Creamy sun dried tomato pasta



You know I LOVE pasta. Especially pasta with creamy sauce, and sun dried tomatoes!


Ingredients
• 1 tablespoon butter
• 2 cloves garlic, minced
• 1/2 cup sun-dried tomatoes, chopped
• 2 cups chicken broth
• 2 cup heavy cream
• 2 boneless chicken breasts
• salt and pepper to taste
• 2 tablespoons olive oil
• 8 ounces dry fettuccini pasta

Directions

In a medium saucepan over low heat, melt butter; add garlic and cook for 30 seconds. Add the tomatoes and the chicken broth; increase to medium heat and bring to a boil. Reduce heat and simmer, uncovered, for about 10 minutes or until the tomatoes are tender. Add the cream and bring to a boil; stirring. Simmer over medium heat until the sauce is thick enough to coat the back of a spoon. Add salt and pepper to taste.

Cut the chicken into small pieces. Sprinkle the chicken with salt and pepper on both sides. In a large skillet over medium heat, warm oil and saute chicken. Then as soon as the chicken is golden, pour the cream mixture from your saucepan into the skillet, on top of the chicken. Simmer for 5 minutes.

Meanwhile, bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain, and transfer into the skillet with the creamy sauce.

And you are all done. ENJOY!

It was beautiful day today...


It was such a beautiful fall day today!

As soon as hubby got home from work, decided to take advantage of the weather and go take some fall pics at a nearby park

However, we lost a piece from our tripod (which we had to order)
So no tripod for us.. So we did not actually get a whole family shot :(








And the little man slept through the whole thing



So we will have to try the fall pics again. As soon as the piece for the tripod comes in and little man is not sleeping. LOL

But we did have a great time playing in the leaves

After the park we went to Olive Garden for some hot soup and bread sticks to warm up.

Like I said, It was a beautiful day ;)



Nicholas is 11 months old!




My little man turned 11 months old!
I still can not believe that in less then a month he will be one


The next doctor's appointment we have will be when he turns one next month, so I do not have any current measurements on him.

But I can tell you that:

He is a very quick crawler, he gets into everything and does not get the meaning of NO!
He crawls up the stairs and then slides down.

He still has 8 teeth

He is eating solids and breastfeeding

Still cloth diapering

He is beginning to let go and stand on his own, which probably means he will be walking soon

He says MAMA, PAPA

He waves bye bye

He is just a precious little boy, I am so thankful to God for this precious gift

Our Craft Room


I am constantly crafting, sewing or working on some kind of project. So it made sense that I should have a craft room where I can work and shut the door at the end of the day even if my project is not complete and not worry about cleaning up.

Here is a little sneak peek into my craft room.
It is 90% complete. There are still a few things I need, But I decided to share it anyways.



Before I show you any more, I want you to see the before pictures.

This is the smallest bedroom in our house.
It was our catch-all-room.




OK, enough with the old. Time for the new!

I can not believe how light and airy this room feels now!

I stenciled the wall using this stencil from Etsy.

The tables and chairs were from IKEA
The bookshelf used to be in the nursery, But I had no room for it in the kids room, so I got to keep it in the craft room.





My neighbor was cleaning out her garage and was going to toss this body form.
I was more then happy to take it from her.




A place for the kids to play while mommy is crafting.

I still want to get this bookshelf from Ikea to put it in front of the window for some kids toys and more craft things.

I would like a new light fixture.
I just have not found one that I like and I can actually afford.

Plus I need to make some sort of bulletin board to pin my ideas to and current projects to.
