Nicholas is 3 months old!


Guess who is 3 months old now? You are right, its Nicholas. Such a precious baby, he is growing so fast, I don't know where the time goes.

He now is cooing and gooing more then ever, and he has such a cute laugh (he laughs when I tickle him LOL). He is now rolling over on his right side, then he starts crying because he can't roll back. He still will not take a pacifier, but instead will suck on his blankie or fingers if he can get them in his mouth.

He is drooling alot now, I don't remember when Emily started teething, but I think this is early. He keeps biting on things, either my shoulder or my finger if i give it to him.

He is still sleeping most of the morning/afternoon which gives me time to cook/clean. This is particularly nice when we take him to church on Saturdays, He usually sleeps through the whole service.

We went out to a restaurant with him and Emily for the first time, He did very well. He sat in his carseat and when he got tired we held him. He didn't even cry once. I have to say, he is a complete opposite then Emily was as a baby.

Cloth Diapering is going great, I love it. We use them everywhere, at church, home, out in the store, restaurant. My favorites now are the Bum Genius 3.0 with the velcro. I don't know why, but I am not liking the Fuzzi Bunz as much anymore.
Since he is only using around 6 diapers a day, I started washing them every other day since I have enough to go 2 days now. I haven't had to buy a single pack of diapers or wipes! talk about saving money. I have met alot of skeptical people about cloth diapers, just as I was when I fist heard about it, But I watched some you tube videos about cloth diapering, and did research on the best diaper. I am so glad I did it now. I can use these diapers for our children to come and never have to buy diapers again. If you are skeptical, go and watch some videos and do some research. Anyways, back to the subject of my little bugger. He is growing big and strong. His next checkup will be when he is 4 months old. So I will post another update then.










Chewy Oatmeal Cookies


After many different oatmeal cookie recipes, I have hit upon one I really love, they are so soft and chewy that I had to share them with you. 



Ingredients

  • 3 eggs, beaten
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking soda
  • 2 cups rolled oats
  • 3/4 cup chopped pecans

Directions

  1. In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
  2. Preheat oven to 350 degrees F
  3. In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.
  4. Bake for 10 to 12 minutes in the preheated oven, until the edges are golden. Allow cookies to cool 5 minutes on the baking sheet before removing to a wire rack to cool completely.

Chocolate Cupcakes with Chocolate Frosting



These chocolate cupcakes are amazing!

Cupcakes:
2 cups sugar
1 ¾ cups flour
¾ cup baking cocoa
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 eggs
1 cup milk
½ cup  vegetable oil
2 tsp vanilla
1 cup boiling water

1. Heat oven to 350
2. Prepare cupcake pan with liners
3. Combine dry ingredients in a large bowl. Add eggs, milk, oil and vanilla. Beat on med speed for 2 min. Stir in boiling water (batter will be thin) 
4. Fill cups 2/3 full of batter. 
5. Bake for 22 min

Chocolate frosting:
1 stick unsalted butter
2/3 cup Hersheys cocoa
3 cups powdered sugar
1/3 cup milk
1 tsp vanilla extract

1. Melt butter in microwave, stir in cocoa, alternately add powdered sugar and milk, beating on med speed. Stir in vanilla extract. Use a pastry bag to pipe the frosting on the cooled cupcakes.

Guess who is 2 months old???


(Nicholas is 2 months old)

I haven’t blogged in a long time, I guess that is expected with a brand new baby and a 3 year old. Lets see, what’s new? I quit my job, I will be staying home with my two kidos. I got to say I miss my job. I miss getting up and out of the house and most of all I miss getting that pay check. LOL. But it had to be done. Since my family moved out of state (thanks a lot guys) I am here with no one to watch my kids, Well no one I feel comfortable and completely trust. But its for the best now. Eventually I will go back to work.
Nicholas is now 2 months old, at his last check up, he was 15 lbs! Wow he is huge. He is such a good baby. Here is what his day looks like. I am going to start with the time he goes to bed at night:
*goes to bed at 12am
*wakes up during the night to nurse around 3am and 5am. After nursing he goes back to sleep.
* He gets up at 8am.
*He goes back to sleep around 10am, he usually sleeps till 12 or one. (this is the time I clean the house, cook, do laundry and so forth)
*Then he usually takes another nap around 5-7.
*And when he is awake during the day, he just lays around and goos and coos. He is such a sweet heart, a very low maintenance baby.
Its difficult for me to stay home all day since I have been working full time since I was 16. Sometimes I don’t get out of the house for a entire week. But hopefully once the warm weather gets here I will be able to go on walks with my kidos. Now is the time for me to give my entire attention to my kids and family. At this time I believe it is the right decision no matter how hard it was for me.

Nicholas is one month old today
