Thanksgiving 2013

Hope you all had a wonderful Thanksgiving!

We started our day out with an annual Thanksgiving church service, followed by a intimate thanksgiving dinner at our house, lighting hanukkah candles, opening hanukkah presents, and then lots of relaxing with the family (and playing with our new toys ;)




31 Weeks Pregnancy Update




How far along:
31 weeks and 3 days! Boy, I can not believe how fast the time is flying! I have 9 weeks left (give or take).



Making Hanukkah Cookies



My daughter kept asking me if we could make hanukkah cookies for a few days now, so I finally found a few hours free to make some. My kids love these cookies, even without icing! 

These cookies are soft and the icing dries pretty fast, which is great if you need to take your cookies somewhere. I first tried this recipe last year for hanukkah found here), ever since then, it has replaced my other rolled sugar cookie recipe because I feel it holds its shape so well and tastes to good!

Rolled Sugar cookies:

INGREDIENTS:
1 1/2 cups of butter softened
2 cups of white sugar
4 eggs
1 tsp vanilla extract
5 cups of flour
2 tsp baking powder
1tsp salt

DIRECTIONS:
1.In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
2.
Preheat oven to 350 degrees F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets. Bake for 8-9 minutes (depending on how thick you roll out your cookies. 


Sugar Cookie Icing

INGREDIENTS:
2 cups confectioners sugar
4 tsp milk
4 tsp light corn syrup 
1/2 tsp almond extract
food coloring

Directions:


1.In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
2.Divide into separate bowls, and add food colorings to each to desired intensity. Use a piping bag to decorate the cookies.

Hanukkah Decor 2013


I put up our hanukkah decorations last night and the kids were so excited when they saw it all this morning! 

Just some brief overview on Hanukkah and what it is:
 In Hebrew "hanukkah" means dedication. The name reminds us that this holiday commemorates the re-dedication of the holy Temple in Jerusalem following the Jewish victory over the Syrian-Greeks in 165 B.C.E.

Once the Maccabees had regained control they returned to the Temple in Jerusalem. By this time the Temple has been defiled by using it for worship of foreign Gods and sacrificing swine. Jewish troops were determined to purify the Temple by burning ritual oil in the Temple's menorah for eight days. 
But they only had enough oil left for one day in the Temple. (It took 8 days to make more oil) They lit the menorah anyways and to their surprise the small amount of oil lasted for the full eight days!

Every year it is customary to commemorate the miracle of the Hanukkah by lighting a hanukkah menorah. The hanukkah is lit every night for eight nights.

Traditionally the Hanukkah menorah is set in front of the window (we tried it but with a curious 2 year old, it wasn't very safe.)

The large menorah is from pottery barn (last year) but they have it again this year and it is on sale now.

I love that we are starting new traditions with our little family. I hope to keep it up each year, so one day they can keep these traditions with their families.

Mint Cheesecake Bars


I have really been on a baking kick lately. I blame the cold and rainy weather. It just makes you want to warm up the kitchen with some baking with the kids! Plus you get to cozy up next to the fire with some tea and dessert after dinner!

My favorite kisses are out now: the candy cane kisses. I love the white chocolate with the peppermint!


I decided to incorporate them in a cheese cake bar recipe. 

Ingredients:

30 finely crushed oreo cookies (easiest to do in a food processor)
1/2 cup of butter melted
1 (8 oz) package of cream cheese (softened)
1 (14 oz) can of sweetened condensed milk
2 eggs
1 tsp peppermint extract
15 chopped Candy Cane Kisses

Instructions:

Heat oven to 325

Combine the finely crushed Oreo cookie crumbs with the melted butter in a med bowl, mix well. 

Press into a un-greased 9 inch baking pan.

Bake 6 minutes. 

Beat the cream cheese until fluffy. Gradually add the condensed milk, eggs and peppermint extract until smooth. 

Pour over the cookie base. 

Bake 25-30 minutes. 

Once you remove the bars from the oven, sprinkle the chopped kisses chocolates and let cool. 

Cut into squares once bars are completely cool. 






Soft Snickerdoodle Cookies



Our favorite little noodle place opened near us, and they have the best soft and chewy snicker doodle cookies there. The kids and I have been obsessed with them. 
So the last time we were there, my daughter asked if we can make these cookies, I figured why not!

Now the kids prefer these to sugar cookies! 

These are super easy and oh so yummy! 

The recipe is from here

Ingredients:

1 cup butter (softened) 

1 1/2 cups sugar

2 large eggs

2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon



Directions:


1. Preheat oven to 350°F.


2. Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl.


3. Combine flour, cream of tartar, baking soda and salt in a separate bowl.


4. Blend dry ingredients into butter mixture.



5. Mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.


6. Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.


7. Coat by gently rolling balls of dough in the sugar mixture.


Place on  ungreased cookie sheet, and bake 10 minutes.


Remove from pan and transfer to a cooling rack.

Enjoy!

Breakfast Cranberry Orange Bread


Ok, this breakfast bread is amazing! I tried a similar bread from a local bakery and loved it, so I decided to try and make some myself.  I found the recipe here. I did change out a few things. 

            Ingredients
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup plain yogurt
  • 1 cup sugar
  • 3 large eggs
  • zest of one orange 
  • juice of an orange
  • 1 tsp vanilla
  • 1/2 cup veg oil
  • 1 cup fresh cranberries and 1/4 for the top

  • For the Icing:
  • 1 cup powdered sugar
  • 2- 3 tbsp cream
Instructions
  1. Preheat oven to 325, grease the bottom of 8 inch loaf pan and add a piece of parchment, enough so that it sticks out over the sides of the pan.
  2. Combine yogurt, eggs, sugar, orange zest, orange juice and vanilla, oil in a medium bowl. Mix well, add the flour, baking powered and salt and mix.
  3. Add in the 1 cup of cranberries (I chopped mine in half).
  4.  Pour batter into the pan. Add the extra cranberries on top of loaf.
  5. Bake for 45-50 minutes until toothpick comes out clean. Remove from pan, that is where the parchment comes handy. 
  6. Make the glaze by mixing the powdered sugar with cream. 
  7. Spread glaze over the cake, enjoy!

I made mine the night before, and just popped the whole loaf in the microwave for about 30 seconds the next morning. It was amazing!

Fall 2013 Family Photos


We were planning on getting our photos taken by my cousin, but it rained that Sunday, then we rescheduled for next Sunday, but guess what? It rained again. 
So on a clear Wednesday afternoon, when hubby came home before it got dark, I gathered everyone up and we headed to a park nearby with my tripod. 

They are not professional, but I am glad we got a chance to take these this year.
Time flies by, and it is nice to have yearly photos to look back on.

New lamp -family room and living room updates

Say hello to my gorgeous new lamp



Lamps.com contacted me to see if I wanted to review a lamp! Off course I jumped at the opportunity, I LOVE table lamps. I have one in almost every single room. 
The first thing I do in the mornings, is open the blinds and if it is a gloomy day, I turn on table lamps around the house. I love the soft light in all the rooms. 

It took me some time to decide which lamp to choose, there are so many options to choose from! I finally chose the Dimond Waverly Lamp, and I am glad I did. 
I have to say, this lamp is beautiful! Even my husband (who doesn't pay much attention to home decor) thought it was gorgeous! It is so sturdy well made and by far the best looking lamp in the house.
