Ingredients:
2 1/4 cups of flour
3/4 tsp salt
2/3 cup vegetable shortening
8-10 TB cold water
2/3 cup sugar
1/3 cup flour
1 tsp cinnamon
3 1/2 pounds tart apples (peeled, cored and cut into 1/4 inch thick slices
Crumb topping:
1 cup quick cooking oats
1 cup brown sugar
1/2 cup flour
1/2 cup butter
1/2 cup chopped pecans
In a large bowl, stir together oats, flour and sugar. Cut in the butter until mixture resembles course crumbs. Stir in chopped pecans.
Grease a baking dish.
For the dough, stir together the flour, salt. Cut in the shortening until the mixture resembles course crumbs. Sprinkle 1 TB of cold water over part of the flour mixture, toss with a fork.
Repeat, using 1 TB of cold water at a time, until all of flour s moistened. Using fingers, gently kneed the dough until it forms a ball.
Preheat oven to 375F.
On a sheet of parchment paper, add flour and roll out the dough into a rectangle. Ease dough into the baking dish (don't stretch it) Trim dough if it is to large.
In a large bowl, combine the apples with sugar, flour and cinnamon. Toss until all the apples are coated.
Spread the apples into the dough lined pan.
Sprinkle with crumb topping.
Bake for 40-45 minutes.
Cool slightly.
Serve warm or cool slightly.
Cut into rectangles.
