We love turkey meatloaf in our house. It tastes delicious and is a great comfort food.
This is my go to recipe. If you never tried it, I suggest you do :)
Ingredients:
1/2 cup of chopped onion
olive oil
1 lb lean ground turkey
1/2 cup of oatmeal
1/4 cup and 2 TB of ketchup (the good stuff, our favorite is the Portland Organic Ketchup)
2 tsp worcestershire sauce
1 egg
1 tsp marjoram
salt and pepper to taste
Directions:
Preheat oven to 350. Spray a loaf pan with cooking spray
Saute the chopped onion in the olive oil, until translucent.
In a medium bowl, mix the turkey, sautéed onion, oatmeal, egg, ketchup, salt/pepper, marjoram.
Shape into a loaf in a loaf pan.
In a small bowl, mix the remaining 2 TB of ketchup with worcestershire sauce and brush onto the loaf to give it a nice glaze.
Bake uncovered for 40 minutes at 350.
Here is what it should look like when it is done:
After baking let it sit 5-10 minutes before slicing.
ENJOY!
