Cream cheese filling inside the red velvet cupcake? Yes please!
Ingredients:
Filling-
8 OZ cream cheese softened
4 TB of granulated sugar
1 Egg beaten
1/2 tsp vanilla
Batter-
2 & 1/8 cups of flour
4 tsp cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup vegetable oil
1 & 1/3 cup of granulated sugar
2 tsp vinegar
2 eggs
1 TB red food coloring
1 tsp vanilla
6 TB sour cream
Preheat oven to 350
line 18 muffin cups with paper liners
Prepare filling first:
Beat together cream cheese and sugar
Add egg and vanilla and stir until smooth
set aside
Prepare the batter:
Combine together the flour, cocoa powder, baking soda and salt
In your standing mixer, add the oil, sugar, vinegar, egg, red food coloring, vanilla and sour cream
mix well, then add the flour mixture and mix until well blended
Add a heaping TB of batter into your lined muffin cups (which should fill it about 1/3 of the way)
Then add 1 TB of the cream cheese mixture
Then over that add a small dollop of batter (making a bulls eye pattern)
bake for 18-20 minutes
until a toothpick comes out clean
Then remove from the muffin pan and let cool on wire rack
Then enjoy with your friends and family.
or all by yourself... I am not judging... they are, after all red velvet ;)
Oooooh, those look tasty! I just had red velvet frozen yogurt a bit ago (so yummy!) and I've been wanting to make a red velvet cake ever since, but this looks even better :-) Thanks for the recipe!
