Marshmallow Treats




Who doesn’t like Rice Krispies? Quick and easy.

Ingredients

1/4 cup butter
4 cups miniature marshmallows
5 cups crisp rice cereal



Directions

Melt margarine in large sauce pan over low heat. Add marshmallows and stir until melted and well-blended. Cook 2 minutes longer, stirring constantly. Remove from heat.

Add cereal. Stir until well coated.

Using buttered spatula or waxed paper, press mixture evenly and firmly in buttered 13 x 9 inch pan.

Cut into 2 x 2 inch squares when cool.

Roasted Red Potatoes


These roasted red potatoes are very easy to prepare and taste excellent!


Ingredients


1 (1 ounce) envelope dry onion soup mix
2 pounds red potatoes, halved
1/3 cup olive oil


Directions


Preheat oven to 450 degrees F (230 degrees C).


In a large plastic bag, combine the soup mix, red potatoes and olive oil. Close bag, and shake until potatoes are fully covered.


Pour potatoes into a medium baking dish; bake 40 minutes in the preheated oven, stirring occasionally

Chicken Marsala


Dinner last night: Chicken Marsala. Very good!! Me and My husband finished everything!! There where no leftovers at all! It is so quick and easy. I served it with some potato wedges and veggies.

Ingredients


1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
2 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry


Directions


In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.


In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces when browned, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 15 minutes, turning once, until no longer pink and juices run clear.

My friend threw me a shower this weekend. It was the most beautiful shower I have ever been to! She did such a great job!

The cupcakes where Yummy! But that is expected from Larson’s Bakery. They have the best butter cream frosting. We just bought the cupcake liners and picks to match the theme from Michael’s.

Cutting the cake. It was so sad to cut since it was so beautiful. But it was mighty good! The top tier was chocolate cake with coffee filing and the bottom tier was white cake with raspberry filling.

Enjoying The Last Few Days of Warm Weather

Hi everyone!!

We had a great time, Emily enjoyed the farm and so did we. We went thru a corn maze, visited the farm animals, and played on the large haystack. I think that was Emily’s favorite thing to do. Daddy helped her climb to the very top and she didn’t want to come down.












Creamy Chicken and Wild Rice Soup


I usually don’t make creamy soups, it is just something we don’t usually eat. But I had some left over chicken from dinner on Monday, so I shredded and decided to give this soup a try. Both me and my husband each had 2 bowls!! That is how good it was!


I will certainly make this soup again, it is so hearty and a perfect way to warm your tummy on a cold winter day. I think I actually prefer it to the regular chicken noodle soup now.

I did serve it with home made bread. But I cheat when it comes to my bread. I buy frozen bread dough and make it that way. A quick short cut and we get fresh hot bread with our dinner.


Ingredients


4 cups chicken broth
2 cups water
½ cup of chopped onion
½ cup od chopped carrots
½ a cup of chopped celery
Olive Oil
2 cooked, boneless chicken breast halves, shredded
1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup all-purpose flour
1/2 cup butter
2 cups heavy cream



Directions



In a large pot over medium heat, sauté the onions, carrots and celery in the olive oil. Sauté for a couple minutes until softened. Combine broth, water and chicken. Bring just to boiling, then stir in rice, reserving seasoning packet. Cover and remove from heat.


In a small bowl, combine salt, pepper and flour.


In a medium saucepan over medium heat, melt butter. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture by tablespoons, to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, 5 minutes.


Stir cream mixture into broth and rice. Cook over medium heat until heated through, 10 to 15 minutes.


Serve with some fresh bread. Enjoy!
